One Egg or Two
Tuesday, July 17, 2012 at 5:31AM I find myself eating a lot of eggs. Scrambled, hard boiled, and omeletes. I'm not great at making omeletes but my husband seems to have a knack for making them. Use your eggs like bread, and fill it with veggies: spinach, broccoli, mushrooms, bell peppers, green onions, a little cheese if you wish, some seasoning and you can have a great breakfast for two. If for two, I suggest 4 eggs mixed with 2 glugs of milk (hubby's measurement, not mine), but you could also make a smaller one with half that, and it will also depend on the size of your frying pan.
