It's not that difficult to whip together a nice cheese sauce, but for those who feel that's too much effort, the Riego Foods cheese packets aren't bad. They don't make that much so you might need two packs if you're doing up 2-3 large servings of pasta. I used the white cheddar for a little extra something on top of broccoli and I actually had to thicken it up a little with some cornstarch. Of course you need to be careful with that, because it can thicken really quicken. Overall, I good item to have in your cupboard for a last minute meal or as a backup plan.

Sorry for the lack of words but it has been a crazy week! And you know what two foods make me happy? Chocolate and cheese! I picked up this beaut at Costco yesterday and it is delicious! It's like French onion dip and white cheddar had an affair. I mean if you're going to have stinking cheese breath, why not make it stinking onion, cheese breath. :-)
Cheese of the week for me: dill goat cheese. I had been eyeing this at the store and finally bought it this past week. I've had a slightly harder goat cheese that I could crumble into my salad; this is more of a soft spreadable cheese great for pairing with crackers and wine.
