Spinach Pizza Crust 

I have been on a little ibt of a personal mission to make a gluten-free, grain-free, awesome pizza crust from scratch. I tried one using cauliflower- that was a big fail, I tried using zucchini, acceptable, although I think the zucchini could have used a go around in the oven or the dehydrator to dry it out even more, and most recently I think i discovered what will be a perfect pizza, with a few more rounds of tweaking. SPINACH! Yes, spinach. My crust was made compeltely out of spinach, eggs, herbs, and almond flour, that's it! 

 Step one: blend spinach with just a little bit of water.

 Step two: blend the liquid spinach with an egg.

 Step Three: Add in some almond flour and you'll ge a nice paste. 

 Step Four: Pat it out on parchment paper.  

 Step Five: Top it, Bake it, and Fork & Knive it. 

I'm still working on measurements of all the ingredients, so I'm not posting any exacts yet, but I had to share my little kitchen adventure.

Tomato Joe's Pizzeria 

The general reviews of this place were so positive on Yelp so I went slightly off my path to try their gluten free pizza. You can only do gluten free in the 14" size so bring a gluten free friend but it will be worth it. We ordered the chicken bacon ranch and it was amazing! Very rich flavors from the ranch; I usually order extra cheese but glad I didn't for this one because it was perfectly balanced. The crust was thin, and slightly floppy when you picked it up but not nearly as whimsy as some other crusts I've come across.

A bunch of the combos they had sounded so good that it was hard to decide. Definitely more of a grab and go place but they have some outdoor seating for the nice days. Overall the pizza was reasonably priced an unbelievably good. It's probably good I don't live closer to this place. If you're hungry near the grapevine you should call ahead and place an order. 

After I posted my review on Yelp, I got a response from someone from the company and was glad to hear that they take pride in offering a gluten free option: 

"Thank you so much for taking time to write your great review. It means so much to us to hear from our customers. We strive to make the best gluten free pizza we can. We also make pizza in half and half so you could venture out and try a new selection. Our customers are very important to us and we are thrilled when we do a great job for them. Fresh Brothers Does Gluten Free Right 

I don't know about you but I have a list of gluten-free restaurants that I want to try regardless of location in case I ever travel there. Fresh Brothers had been on my list for Southern California and it just so happens that my last trip to that area led me right into their restaurant. It's more of a take-out pizzeria, however they had some limited seating, and lots of TVs if you were looking to watch the local game. The menus are at the counter and they have a full nicely color printed gluten-free menu for salads and pizzas and even some desserts although I didn't leave room for dessert.

The gluten-free pizza comes in personal pan size, medium, and large. I went with a personal pan because it reminded me my days of the book reading club at Pizza Hut (if you don't know what I'm talking about please disregard). In any case I got the small pizza which was four slices with extra extra cheese artichokes and bacon and it was delicious. With a small soda my pizza cost me $12. Is that pricy? Not sure. It was good and if I lived in the area I would certainly go back. I don't know about the kitchen situation; if the pizza crust was made in house or made at local bakery But I didn't get sick which is always a plus when you're on vacation. If we had been in the area longer I think it would've had some delivered to our hotel room. This pizza also made a great cold breakfast.
