Crockpot Pulled Pork

 I pretty much only eat fish and chicken but on a rare occasion I'll treat my husband to some pork or beef. I decided to make a version of pulled pork from a fellow blogger. I used McCormick Asian Spice instead of the five spice seasoning, almond oil instead of sesame oil, and I tweaked the soy sauce a litte but it was basically still the same recipe. I drained extra liquid about half way through and started to shred the pork. Use any fresh herbs you have; I used green onions, cilantro, and basil. I really liked this and would have been great as a taco filing too. Of course you could serve this with asian noodles or rice, but I'm on a pretty clean diet.

Stuffed Artichokes

I love my stuffed bell pepper recipe, and I seem to be on a roll of stuffing veggies with veggies: mushrooms, bell peppers, and now stuffed artichokes. I was inspired by a recipe from one of my cookbooks, but I kind of just went on my own marry way with making this. I cleaned up the stem, trimmed the tips, and chopped a little extra off the top. I boiled 2 "chokes" for about 40 minutes like I would if I were just going to eat them as an appetizer, but then I took it one step further. 

After they drained upsiude down, and dried out a little, I pulled out some of the middle of the artichoke. 


Then I sauted some sausage, onions, mushrooms, and bell peppers with some salt, pepper, and garlic. I put that mixture into the center of the artichoke. The leaves will spread open pretty easily. Then put your artichokes in a bake pan, with a low level of water, and cover them with foil. Bake for about 30 minutes at 375 and that's it.

Delicious!

Late Night Snack 

For a late night snack my friend and I decided to see what we could make with what was in her refrigerator. I pulled out some tortillas, corn, hot dogs, and some veggies and we went to work.  We heated up the tortilla on thestove, threw on a big slice of cheese, sauteed some onions and mushrooms, added a sauteed hot dog, and more cheese. Consider it a cross between a taco and a taquito. What can I saw the state fair inspired us. it might sound werid, gross, whatever, but it was good.
