Vegetable Stir Fry

I seriously cannot seem to keep produce in my house. We go through so much produce it is ridiculously crazy. The other night I took a big bunch of vegetables and made a great stir fry. You can keep it simple and fresh and just use fresh herbs and a little seasoning, or you can dress it up a little drizzle of some low sodium soy sauce and a little hot sauce, or any other sauces you like. However, my point is that you should be able to taste the vegetables. Of course you can use which ever greens you like, but here's what I used:

1 green bell pepper

1 red bell pepper

1 orange bell pepper

1 head broccoli, chopped into bit size pieces

Handful of snap peas

1 8 oz container mushrooms 

Handfuls of fresh herbs: basil, cilantro, parsley

Shrimp and scallops

Freshly sauteed garlic, minced

Sprinkle of salt and pepper

Spicy Ginger Cilantro Fish 

This fresh sauce would truly be great on any fish, but I used talapia since it was in season. Depending on how spicy you like your found you would want to adjust the amount of jalapeno you use. Pair this with your favorite vegetables, we did sauteed onions, and you can have a very fresh, nutritionist meal. Sauteed onions have become one of my favorite fast and simple side dishes.

Two onions, sliced really thin, sauteed in a litte olive oil, garlic-infused if you have it, and add a little salt and pepper until they are golden brown. They get really sweet and they're almost as good as battered onion rings, without the extra calories and without the grains.

Salmon with Citrus Avocado Salsa

We eat a lot of salmon in our house, in fact I dare say that throughout the year we eat almost as much salmon as we do chicken. It is my husband and my favorite fish and while we have our top picks on how to prepare it, it is nice to switch it up, even if just a little, to make it seem new again. We did a fresh winter avoacado citrus salsa over simply seasoned salmon that we baked. 

Simply line your pan with foil to ease the clean up process. Use a little olive oil or non-stick spray and then lay down your salmon fillets. Drizzle the fillets with a little more olive oil and then by your taste buds add the following spices: 

salt

onion powder

paprika

black pepper

cayenne pepper

Last but not least, but 2 full slices of orange on top of each fillet. Cover with foil and bake for about 20 minutes at 400 degrees. Meanwhile, make up your fresh salsa. 

1 large avocado diced

1/4 cup diced red onion

1/4 cup diced bell pepper

3 tsp lime juice

3 tbsp orange juice

fresh chopped cilantro

salt & pepper to taste

Once the salmon is done, removing the orange slices for plating and add some of your salsa. It can appear fancy but it's super simple and you could make the salsa a few hours ahead.
