Stuffed Onions 

I have made stuffed bell peppers, stuffed artichokes, and my latest stuffed onions. I love sauteed onions so baking a whole onion sounded like an appealing idea to me. I found the basic recipe from one of my twitter friends: The Naked Kitchen. I roasted my onions in garlic infused olive order and my "stuffed" mixture was slightly different. You can go the vegetarian route and keep it stuffed with just mushrooms, spinach, and onion, and serve as a side dish, or you can add some sliced, cubed pieces of sausage and make it your entree. I recommend the Aidell's brand. I mixed my sauteed mushrooms, spinach, and sausage mixture with a little almond flour, about 3 tbsp to help hold it all together.

You may end up with more stuffing than you need, like I did, so I actually separated some of the mixture and just put it in tubberware minus the almond flour to eat later. You could add some cheese, but it's really not needed. Just season accordingly and you should end up with a very nice dish.

Portabello Salad 

Here's a new salad combination for you: grilled portabello mushroom, with tomatoes, green onions, and goat cheese on a bed of lettuce. We have grilled portabellos fairly often in our house, as they are hardy and a great meat substitute. Just drizzle them with some olive oil and some fresh herbs, salt and pepper, and grill on medium heat for 5 minutes per side. You could also cube them up and sauté them with some coconut oil and fresh herbs, and then put them on a bed of greens. I thought this was absolutely delicious and the oil from the mushrooms acted as my salad dressing. 

It almost reminded me of a "fresh" version of a Greek salad. Last but not least, I had to throw in some cheese. Salad for me is not complete with out some sort of cheese, I guess I just have some dairy farmer genes, lol, but I have been using goat cheese more and more often over my go-to cheddar cheese.

Chickpea Stew

I had some miscellaneous cans in my cupboard so I decided to pull a stew-like dish together. I started by sauteing diced onions and fresh garlic, then added in a can of diced tomatoes, a can of tomato sauce, 2 cans chickpeas, and fresh spinach. I'm not one to measure, I kind of just throw things together, and cooking that way doesn't work for everyone, but you should give it a try. In any case, I seasoned with some paprika, some basil, pepper, garlic, and a little smoked salt and I let it stew for a bit. Overall, pretty tasty. You've got your protein from the garbanzo beans, and vitamin A and some iron from the spinach, and very little fat, so all-in-all a healthy meal.
